Lotus root (available in Asian market).
As the root of lotus plant, it contains all the nutrients to produce a lotus flower plant.
Cut lotus root into small cubes.
Heat up oil at medium heat.
Add 2-3 dried chilli pepper and fry for 30-60 seconds. it actually won’t make the dish that spicy but more for color and aroma. May explode but you can survive it. make sure the heat is not too high.
Add ginger and garlic pieces. Fry for 1 minute.
Increase heat to medium high.
Add lotus root and stir quickly for 1-2 minutes.
Add 1 tea spoon of rice vinegar.
Lotus roots may get sticky cause it’s starchy. Stir fry quickly to avoid burn. Add little bit of water if necessary.
Stir for another 2-3 minutes until done but still crisp.
